fall 2025 — BRIN 424: Capstone: Interdisciplinary Beer Design Lab 
Tickled Peachy Keen

Name of Beer: "Tickled Peachy Keen"

Brew Team: Claire Schwanauer, Kieran Galvin, Bailey Cain

Style: Fruited Sour Ale / ABV 3%

Inspiration: Leaning into the novelty of a pickle beer by leveraging consumers excited about the uniqueness of the flavor, while creating something that leaves them reaching for another. Designed to be light in mouthfeel and ABV (not in flavor), fruity, slightly sour, and refreshing—something to enjoy after physical activity.

Sensory Description: Peach, raspberry, light bodied with a snap of acidity and spice.

Chu-rah!

Name of Beer: "Chu-rah!"

Brew Team: Daela Montgomery, Miles Griffin, Keila Barton

Style: Grilled Pineapple Amber Ale / ABV 6.25%

Inspiration: Grilled pineapple fresh off the grill, balancing smoky, sweet, caramelized notes with the bright and acidic character of pineapple. Brewed using smoky malt as a supporting player without letting it take the forefront.

Sensory Description: Slightly sweet, caramel, pineapple, and lightly smoky.

Tree Topper

Name of Beer: "Tree Topper"

Brew Team: Avery Scott-Fudge, Hailey Sandler, Valentin Tiburcio

Style: Holiday Spiced Belgian Blonde / ABV 5.4%

Inspiration: Tree Topper was built around botanical pine brightness, elegant citrus, subtle spice warmth, and a crisp finish. It reflects the emotional tone of winter in an approachable form. Nostalgia, warmth, and the symbolic star on the tree shaped both the flavor and brand identity. Rooted in user needs, technical experimentation, and intentional design, this beer pairs beautifully with cozy gatherings, Christmas crafts, fresh-cut trees, holiday baking, and placing the star atop the Christmas tree.

Sensory Description: Our Tree Topper Spiced Belgian Blonde Ale blends biscuity flavors with cinnamon, nutmeg, cloves, and orange peel, allowing Douglas fir elements to take center stage. Light, crisp, and refreshing, with lively carbonation that twinkles like lights on a tree and a bright flavor that might grow your heart three sizes.

excalibier Spring 2025

Name of Beer: "Excalibier"

Date Brewed: 5/9/2025

Brew Team: Daela Montgomery, Miles Griffin, Keila Barton

Style: Kuetebier/ IBU 37/ ABV 5.1%/ 7 SRM

Inspiration: A smoky medieval beer that is the historic predecessor to many German beers like Kolsch and Altbier

Sensory Description: Malt forward in caramel sweetness, subtle smoky quality

Kornøl Spring

Name of Beer: "Kascadian Kornøl"

Date Brewed: 5/9/2025

Brew Team: Avery Scott-Fudge, Hailey Sandler, Valentin Tiburcio

Style: Norwegian Raw Ale/ IBU 6/ ABV 7.7%/ 5.4 SRM

Inspiration: Kornøl is a traditional Norwegian farmhouse ale, raw (unboiled) and rustic, brewed with kveik yeast to create a uniquely smooth and warming experience

Sensory Description: A PNW twist on an ancient beer with Oregon Douglas fir branches and tips for a citrusy aroma/flavor. Warming and sweet.

Name of Beer: "Maple Bar"

Date Brewed: Feb. 14, 2025

Brew Team: Daela Montgomery, Hailey Sandler, Claire Schwanauer

Style: Saison / 5.4% ABV / 32.3 IBU / 23.0 SRM

Inspiration:  Maple syrup, glazed donuts, pralines

Sensory Description Sweet aromatic maple with a hint of nuttiness! Flavors of maple syrup and fluffy donut balanced with the bitterness of chocolate malt and subtle hops!

Style:  American Fruited Sour / 5.5% / 30 IBUs ​

Inspiration: From failed blackberry sour to sour candy 

Sensory Description: Mixed berry (blackberry and raspberry), lime, sweet aromatic, candy, sour with a bitter finish, light bodied with high carbonation.

Inspiration: Mounds® Bar, Girl Scout Carmel Delites/Samoas

Sensory Description Dark, roasty chocolate, sweet, rich coconut thinner body than expected for a stout, and crisp finish with some residual bitterness
