Riverfront Bistro, the UO's newest dining destination located on the southeast side of Knight Campus Building 2 on Riverfront Parkway, will open to the public on Monday, April 20. Operated by UO Dining Services, the bistro will serve breakfast and lunch Monday through Friday from 7:30 a.m. to 4 p.m. The menu features a wide range of options, including:
- Morning selections such as the Gouda Morning brioche sandwich, Avo Luxe croissant sandwich, and the all‑vegan Tempeh Sunrise breakfast sandwich.
- Shareable plates like Fried Castelvetrano Olives, Creamy Burrata with Roasted Tomatoes, and curated Salumi & Cheese Board.
- Hand‑crafted focaccia sandwiches including the Calabrese, Modena, and Chicken Parmesan.
- Fresh salads like the PNW Bistro, Caesar, and Panzanella, with the option to add PNW steelhead or crispy chicken.
- A full lineup of certified organic espresso beverages, cold brew, tea, and specialty drinks from Groundworks Organic Coffee Roasters.
The bistro is designed to be a flexible, comfortable space for students, employees, and campus visitors alike.
